It's Monday afternoon and my kids should be coming off the bus in about an hour; I'm getting in all the "me" time I can until then!
So, as much as I am trying to be all RAW, I'm still eating a bit of cooked, vegan foods, especially in the Fall and Winter time.  The kids and I were wanting some tacos yesterday, so we whipped this up!


Roasted Potato Tacos!
                                           

This is SO easy and SO good to make!  We roasted some organic potatoes with some coconut oil and garlic salt.  (Add your favorite herbs) Then make your favorite guacamole recipe, layer on some lettuce wraps or corn tortillas.  I ate three wrapped in lettuce.  We also had some kiwis as a side! Really though, who doesn't like potatoes??

I also can't wait to share my favorite raw, vegan chocolate recipes and brands! So keep a look out!
I'm hoping the abundance of summer fruits will help me be completely RAW!
